The Whole Foods Tiramisu

Ingredients
  

  • 6 or more whole wheat lady fingers
  • 1 cup mascarpone cheese (or cream cheese)
  • 1 1/2 cups sugar or 3 tablespoons stevia adjust the sugar to your liking
  • 4 tbsp organic egg whites
  • 3 tbsp rum
  • unsweetened cocoa powder for dusting
  • 3 tbsp instant espresso powder

Instructions
 

  • Prepare the coffee syrup. Place espresso powder, rum, and 1 tablespoon of sugar over a low heat, stirring until the sugar is dissolved.  Set it aside to cool.
  • In a mixing bowl, beat together the mascarpone cheese and egg whites until they are light and fluffy.  Add a small amount of sugar, if you desire.  Place in the refrigerator to cool.
  • Once the syrup cools down, dip each ladyfinger into coffee syrup for about five seconds and then place them in an eight by eight-inch baking dish lined with parchment paper.
  • Once all of the ladyfingers have been dipped, spread the mascarpone mixture over the top.
  • Sift one tablespoon of unsweetened cocoa powder evenly over whole foods tiramisu dessert.
  • Place it in the refrigerator for at least two hours before serving. Enjoy!
