Prepare the coffee syrup. Place espresso powder, rum, and 1 tablespoon of sugar over a low heat, stirring until the sugar is dissolved. Set it aside to cool.
In a mixing bowl, beat together the mascarpone cheese and egg whites until they are light and fluffy. Add a small amount of sugar, if you desire. Place in the refrigerator to cool.
Once the syrup cools down, dip each ladyfinger into coffee syrup for about five seconds and then place them in an eight by eight-inch baking dish lined with parchment paper.
Once all of the ladyfingers have been dipped, spread the mascarpone mixture over the top.
Sift one tablespoon of unsweetened cocoa powder evenly over whole foods tiramisu dessert.
Place it in the refrigerator for at least two hours before serving. Enjoy!
