Ingredients for the bread

  • 1 box (15.25 ounces) of yellow cake mix of your choice
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 1/2 cup canola oil
  • 3/4 cup heavy cream, room temperature
  • 3 large eggs, room temperature
  • 2 cups shredded Granny Smith apples (peeled)

  • 1/2 cup caster sugar
  • 1 teaspoon ground cinnamon
  • Vanilla ice cream or whipped cream (optional)

Instructions
 

  • Prepare the ingredients
    To start, preheat your oven to 360ºF (180ºC). Then, line two loaf pans with non-stick baking paper. Make sure that the baking paper fits over the sides and out of the pan. It will make it easier to lift out.
    Then, you can also spray the pan with non-stick cooking spray. Or, brush it with melted butter.
    Next, measure out all of your ingredients and prepare the apples.
    Make sure they are cored, peeled, and completely shredded.
  • Make the cake batter base
    To start, add the dry ingredients together in a large mixing bowl. Mix them well to ensure they are well distributed. Set them aside.
    Next, whisk together the oil, heavy cream, and eggs in another bowl. Once you have a uniform mixture, set it aside as well.
    Then, add the wet ingredients to the dry cake mixture. Mix the batter on medium speed for roughly 2 minutes. Remember to scrape down the sides to ensure the batter mixes evenly.

  • Add the apples
    Just before your batter is completely mixed, add the shredded apples. Fold them in gently to avoid overworking the batter. Make sure they are evenly distributed.

  • Bake the apple pie bread
    Divide the batter between the two lined loaf pans. Then, bake them for roughly 45-50 minutes or until a toothpick comes out completely clean.
    Remove the loaves from the oven and allow them to cool at room temperature.
  • Make the topping
    While the cake is cooling, make the cinnamon sugar topping. Whisk together the caster sugar and ground cinnamon. The sugar should be completely discolored. That's when you know it has been mixed well.
    You can also start making ice cream balls or whip the cream - whichever you choose.

  • Assemble and serve your apple pie bread
    Finally, once your loaves of bread have cooled, dust the tops with cinnamon sugar. Slice the bread and serve it with a scoop of ice cream or a dollop of whipped cream.

Notes

Many people will probably be wondering whether or not you can add big apple pieces to the bread. You can, but we don't recommend it. As the apple softens when it's cooked, it will shrink. Simultaneously, the bread structure sets in place. So, when the apples shrink, it leaves gaps in the bread. This ultimately causes the loaf to sink in.
