Add the mixed noodles to the skillet and distribute them evenly so they can cover the whole bottom part of the pan.

When done, remove them from the fire and place them on a cutting board.  Cut them into about 21/2 inch squares.

Ingredients

  • 1.5 cups raw wheat noodles
  • 1 cup  shredded Chinese cabbage
  • 2 medium carrots, peeled and grated
  • 1 large daikon radish, grated
  • 2.5 cups water
  • 1 teaspoon sesame oil
  • 4 spring onions, chopped
  • 2.5cm piece ginger, peeled and grated
  • 1 clove garlic, minced
  • 2 tablespoons soy sauce
  • 3/4 cup  shredded Chinese cabbage
  • 3 teaspoons sugar
  • 1 tablespoon rice vinegar
  • 3 tablespoons rice wine
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons cornstarch
  • 1 teaspoon salt

Preparation

Step 1

Boil a pot of water and cook noodles until al dente, about 6 minutes. Drain the noodles in a colander and rinse with cold water to stop the cooking process. Set aside.

Step 2

In a wok or large skillet over high heat, heat sesame oil until hot.

Step 3

Add spring onions and stir for 30 seconds. Then add ginger and garlic and stir for another 30 seconds. Next, add the carrots, daikon radish and soy sauce and stir-fry for 5 minutes. Then, add the Chinese cabbage and stir-fry for another 3 minutes. After that, add noodles and mix well.

Step 4

Add the sugar and stir for about 30 seconds. Then, add vinegar, rice wine, toasted sesame oil, cornstarch, salt and rice vinegar. Mix well.

Step 5

Add water and bring to a boil. Reduce heat to medium and simmer for about 5 minutes. Turn off heat and add sesame oil and stir. Serve immediately.
