Recipe For Strawberry Crunch Cake

  • food processor
  • hand mixer
  • piping tip
  • piping bag
  • 8-inch round cake board (or serving plate)

Ingredients

Cake

  • 2 boxes of yellow cake mix
  • 2 cups of water
  • 1 cup of vegetable oil
  • 6 large eggs
  • 3 teaspoons of strawberry extract
  • 2 teaspoons of vanilla extract
  • 20 golden Oreos (chopped)

Strawberry frosting

  • 1 cup of butter (room temp)
  • 2 1/2 cups of sugar (powdered)
  • 1 teaspoon of strawberry extract
  • 3 tablespoons of milk
  • 2 drops of pink/red gel paste color

Vanilla frosting

  • 1/2 cup of butter (room temp)
  • 1 3/4 cups of sugar (powdered)
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of milk

Crumbs

  • .8oz of freeze-dried strawberries (you can find these in stores such as Walmart)
  • 25 golden Oreos

Cake

  1. Preheat your oven to 350F and grease 4 8 inch round cake pans. Dust the bottom of the pans with flour.
  2. Grab a bowl and add the cake mix, eggs, water, oil, strawberry, and vanilla extract. Once added, mix on medium speed until combined well
  3. Fold in the chopped Oreos and mix until evenly spread among the batter
  4. Divide the batter evenly among the 4 pans
  5. Ensure your oven is preheated and place the pans into the oven and bake for around 30 minutes. To ensure your cakes are cooked, insert a toothpick or knife into the center of the cake – if it comes out clean, your cake is ready to take out of the oven
  6. Leave to cool for around 15 minutes in their pans and then transfer to a wire cooling rack to cool further

Frosting

  1. Grab a mixing bowl and cream the butter in the bowl with a hand mixer
  2. Once creamy, add the sugar, extract, and milk (be sure to do separate bowls, one for the strawberry frosting and one for the vanilla). Mix well
  3. If you’re making the strawberry frosting, add the food coloring at this point (you do not need any coloring for the vanilla frosting)
  4. Whip the frosting on a high speed until you get a light a fluffy frosting

Crumbs

  1. Using your food processer, add the strawberries and Oreos. Blend until you have a crumb. You may need to remove any remaining bigger pieces.
  2. Set to one side.

Assembly

  1. Place the first cake on the cake board
  2. Using the pink strawberry frosting, spread a thin, even layer onto the top of the cake. Repeat this process with two more of the layers
  3. Place the last layer of cake on top
  4. Whatever pink frosting you have to remain, spread onto the outside of the cake (it doesn’t have to be perfect). If you don’t have quite enough, feel free to use some of the vanilla frostings
  5. Now it’s time to add the crumbs to the outside. Grab your blended bowl of crumbs and grab a small handful and press into the cake. This will take time…and it will make a mess! But be sure that the cake is coated
  6. Place the cake on a serving plate
  7. Time to decorate the top! Place the white frosting into a piping bag and pipe the desired way you’d like your cake to look.
  8. Your cake is now ready to serve!
