And make for a really unique cake idea! But what is a clear gelatin cake? Is it different from making a standard cake? Let’s take a closer look.
What Is Clear Gelatin?
Clear gelatin is simply gelatin with a few added ingredients. It’s then left to set and you’re left with the clearest gelatin to make gelatin art with, in desserts, or even gelatin shots. It’s super easy to make and you usually only need either gelatin/agar-agar, along with ingredients such as water, citric acid powder, and sugar.
Clear Gelatin Cake Recipe
Clear gelatin cakes are also sometimes called Rain Drop cakes. Let’s take a look at how to make a Cherry Blossom Raindrop cake from Tasty, which is one of the most popular clear gelatin cakes you can make. It’s worth noting that it may take some practice to perfect this recipe, as it’s definitely not easy!
Ingredients
The ingredients you’ll need for this recipe are split into sections. Let’s take a look at what you’ll need:
Cherry blossom jelly
- 4 teaspoons of agar powder
- 2 1/2 teaspoons of sugar
- 1 cup of water
- 1/2oz of salted cherry blossom
Milk jelly
- 1 tablespoon of agar powder
- 2 teaspoons of sugar
- 1 cup of fat-free milk
For serving
- brown sugar syrup
- matcha

- ice ball tray
Recipe
Once you’ve got your equipment and ingredients ready, it’s time to get making.
Step 1: The cherry blossom jelly
First, you need to make the cherry blossom jelly. Grab a bowl and add the sugar and agar. Combine well
Step 2: Stirring the mixture
Grab a small pan and pour the water into it. Add your agar mixture and stir
Step 3: Boiling the water
Ensure you’re cooking over high heat and do this until the water is boiling. Once boiling, turn the heat to low and cook for around 2 minutes
Step 4: Prepare cold water
In the meantime, fill a bowl with cold water and ice cubes
Step 5: Leave-in ice bath
Take the pan off the heat and place it into the ice bath. Leave to cool for around 3 minutes, stirring every so often
Step 6: Soaking the cherry blossoms
Before using your cherry blossoms, you’ll need to soak them in water for around 10 minutes. After soaking, squeeze the flowers gently
Step 7: Prepare your ice ball tray
Now it’s time to get your ice ball tray. Put the cherry blossoms in the tray and pour the agar mixture over the top
Step 8: Chill
Chill for at least 15 minutes
Step 9: Make the milk jelly
Whilst they’re chilling, you can make the milk jelly. Grab a bowl and add the sugar and agar, mix well
Step 10: Stir the mix
Now pour the milk into a pan, add the agar mix, and stir occasionally
Step 11: Leave to simmer
Place on high heat until it begins to simmer. Now lower the temperature to low heat and cook for around 2 minutes
Step 12: Leave-in ice bath
Like with the cherry blossom jelly, move the pan to the ice for a few minutes
Step 13: Chill again
Now pour the milk mix over the cherry blossom layer (after it’s chilled). Now cover and chill for a further one hour
Step 14: Decorate your cake
Remove the cake and pour the syrup over the top. You can decorate with matcha if you wish
Step 15: Enjoy!
Your cake is ready to serve!
