- 1 cup of sugar
- 1/2 cup of softened butter
- 2 eggs
- 1 teaspoon of vanilla extract
- 2 cups of plain flour
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 cup of buttermilk
For the topping:
- 1 cup of sugar
- 1 cup of chopped nuts
- 1/3 cup of brown sugar (packed)
- 1 teaspoon of cinnamon
- 1/2 cup of butter

Now all you need to do is:
Step 1: Make the batter
Preheat your oven to 350F and flour and grease a cake pan. Grab a bowl and add the butter and sugar and mix until creamed. Once creamed, add the eggs and vanilla and mix until fully incorporated. In a separate bowl, add the flour, baking powder, baking soda and salt.
Now alternatively add the flour mixture and the buttermilk into the the sugar mixture, ensuring it’s mixed well. Set aside.
Step 2: Make the topping
Add the nuts, sugar, brown sugar and cinnamon to a bowl. Cut in the butter. Mix well. Add half of this mixture to your prepared cake pan and pour the batter over the top. Now, sprinkle the rest of the topping over the top of the batter.

- 1/2 cup of granulated sugar
- 1/2 cup of all purpose flour
- 1 teaspoon of cinnamon
- 2oz of unsalted butter
For the cake:
- 4oz of unsalted butter
- 2/3 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 2 large eggs
- 1 1/2 cups of all purpose flour
- 1/2 teaspoon of salt
- 1/2 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1 cup of buttermilk
Recipe
Now all you need to do is:
Step 1: Make the streusel
Grab a bowl and add the cinnamon, sugar and flour. Mix well. Cube the butter and cut using a fork until you get an almost sandy like texture. Keep in the fridge until you are ready to use.
Step 2: Prepare
Preheat the oven to 350F and lightly grease a cake pan with butter and set to one side.

Pour half the batter into your cake pan and sprinkle half the streusel over the top. Add the rest off the batter and sprinkle the other half of the streusel on top. Now place in the center of your preheated oven for around 40 minutes. Leave to cool before serving.
