Preheat your oven to 350 degrees F.
Using a large bowl, mix together the flour, sugar, butter, salt, vanilla, cinnamon, and eggs with an electric mixer on medium speed. Beat this mixture until fully combined.
Once done, fold in the shredded apples. Pour this mixture into the unbaked pie shell and put the pie on a large cookie sheet.
Bake for about 70 minutes. To prevent your pie from burning the top, cover the top pie with a piece of tinfoil during the last 10 minutes of baking.
Carefully remove the pie from the oven and allow the pie to cool and set at least 1 hour before serving.
Serve your pie slices with a scoop of vanilla ice cream drizzled with caramel sauce. Enjoy!
