Preheat your oven to 350 degrees F.
In a bowl, combine the flour, sugar, butter, and salt. Use a fork to break the butter, or a pastry blender if available, until it looks like coarse crumbs.
Stir in the egg yolk. Add as much cold water as needed to make a soft dough that just holds together. Flatten dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
Once chilled, roll out dough on a lightly floured surface to fit a 9-inch pie plate. Fold overhang under itself to form a 1/2-inch lip all around the edge of the pie plate. Crimp edge decoratively.
Bake the pie crust for 10 minutes at 350 degrees F, and then reduce the temperature to 300 degrees F.
In a large bowl, toss apple slices with sugar, flour, cinnamon, nutmeg, and ginger until well mixed. Spoon mixture into baked pie shell, mounding slightly on top.
Bake at 300 degrees F for about 45 minutes, or until apples are tender. Cool before serving.
