Raw Apple Pie Recipe 1

Ingredients
  

For the crust

  • 1 1/2 cups shredded unsweetened coconut
  • 1 cup Medjool dates, pitted
  • 1 1/2 cups walnuts or pecans
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 1 tsp cinnamon
  • 1/2 tsp ground clove
  • 1/2 tsp ground ginger

For the filling

  • 1 apple
  • 1 cup blueberries (or pomegranates)
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Topping

  • 1 cup walnut or pecans
  • 2 apples, sliced thin
  • 3 Medjool dates, pitted
  • 4 drops Wild Orange Essential Oil

Instructions
 

  • To make the crust, put all the pie crust ingredients in the food processor and mix them thoroughly.  Line your pie pan (10-inch) with extra virgin olive oil and pour the crust into the pan patting it firmly. Use your hands to bring lay the crust up on the sides all the way to the rim.
  • To make the pie filling, put all the pie filling ingredients into the food processor and chop them finely.  Combine the apples, pomegranates, blueberries in a large bowl and mash using a fork.  Add vanilla, chia seeds, cinnamon, and mix well. Fill the pie crust with the filling and smoothen it evenly using a rubber spatula.
  • For the topping, use the food processor to slice up the apples very thinly.  Layer them on top of the filling in a circular pattern.  Put your dates, walnuts, and orange essential oil and grind them till they are finely ground. Sprinkle this mixture on top of the sliced apples.  Your pie is ready - serve chilled.
