  • 3 cups rolled oats
  • 1/3 cup light brown granulated sugar
  • 1/2 teaspoon ground cinnamon
  • Pinch ground allspice, optional
  • 2 tablespoons honey, slightly heated
  • 1/3 cup coconut oil, melted
  • 6 tablespoons salted butter, melted

Ingredients for the cheesecake batter

  • 24 ounces full-fat cream cheese, softened at room temperature
  • 1 cup caster sugar
  • 3 tablespoons cornstarch
  • 2 teaspoons vanilla extract
  • 2 large eggs, room temperature
  • 2/3 cups heavy cream, room temperature

Ingredients for the apple pie filling

  • 4 tablespoons salted butter
  • 2 1/2 pounds of Granny smith apples, peeled, cored, and diced
  • 1 cup light brown granulated sugar
  • 4 teaspoons apple pie spice mix
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons cornstarch

Ingredients for the oatmeal crumb topping

  • 3/4 cup cake flour
  • 1/3 cup rolled oats
  • 1/2 cup light brown granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup salted butter, chilled and cubed

Instructions
 

  • Make the oat crust
    To start, preheat your oven to 360ºF (180ºC). Then, line a springform cake pan with non-stick baking paper and cooking spray. Set it aside.
    Place the dry ingredients for the crust into a food processor. Pulse until you have a uniform mixture. Then, add the softened honey, melted coconut oil, and melted butter. Mix until the ingredients are well combined.

  • Pre-bake the crust
    Press the crumb mixture into your lined cake pan, ensuring it is even in thickness.
    Then, partially bake the crust for about 8-10 minutes or until the oats start browning.
    Remove the pre-baked crumb from the oven and allow it to cool at room temperature.
  • Make the cheesecake batter
    Place the softened cream cheese and sugar inside a large mixing bowl. Then, beat them until they become fluffy and the sugar starts dissolving.
    Add the cornstarch and vanilla and mix them in well.
    Next, add the eggs one at a time. Beat them well before adding the next. Then, add the cream and beat it in well too. Your mixture should be completely smooth and fluffy in consistency.

  • Bake the cheesecake
    Pour the cheesecake batter into your partially baked cheesecake crust. Then, bake the cheesecake for roughly 60-70 minutes or until it's finished.
    Once you've tested that your cheesecake is done, switch off the oven and allow it to cool for 1 hour with the door slightly opened. Then, remove it from the oven and cool it at room temperature for another hour.
  • Make the apple pie filling
    Melt the butter in a saucepan over medium heat. Then, add the apples and allow them to cook for 1-2 minutes while stirring.
    Next, add the sugar, spice mix, and vanilla extract. Cover the pot with a lid and allow the apples to cook for 8-10 minutes over medium-low heat.
    Once the apples start softening, remove the lid and continue cooking the apples uncovered.
    After almost all of the apple juices are reduced, add the cornstarch. Give the ingredients a good stir to ensure they are well coated. Cook for 2-3 minutes.
    Then, once the apples have softened, remove them from the heat and allow them to cool completely.

  • Assemble the cheesecake for chilling
    Once the cheesecake is cooled to room temperature, add the room-temperature apple pie filling on top.
    Wrap the entire springform cake pan with plastic wrap and set it in the fridge for 4-6 hours, or overnight.
  • Make the oat crumb topping
    While the cheesecake is setting, start the topping. Pulse together the dry ingredients in the food processor.
    Then, add the cubed chilled butter and keep pulsing until you get a mixture that looks like coarse crumbs.
    Place these on a lined baking tray and bake them in a preheated oven at 360ºF (180ºC) until they're crispy.
    Remove them from the oven and allow them to cool completely.

Notes

The apple pie filling for this recipe can be made in advance. You can allow it to cool completely and store it inside the fridge for up to 3 days. The high amount of sugar will preserve the cooked apples.
