The Crunchy Tiramisu Tartlets Recipe

Ingredients 

  • 1 ½ cup milk chocolate, melted
  • ½ cup strong coffee cooled
  • 4 oz cream cheese
  • 8 oz mascarpone cheese
  • 1/2 cup heavy whipping cream
  • 3/4 cup powdered sugar
  • 8 tbsp unsalted butter
  • 1 large egg
  • 1/4 cup granulated sugar
  • 3 tbsp mayonnaise
  • ⅛ tsp vanilla extract
  • ¼ tsp baking soda
  • ⅛ tsp vinegar
  • 1 2/3 cups all-purpose flour, sifted

How to make it?

  1. Preheat the oven up to 365 degrees F.
  2. Prepare the tart molds wiping them clean with a towel.
  3. Mix the egg, butter, sugar, mayo, and vanilla. Add a tablespoon of vinegar to the baking soda and mix. Add to the rest of the ingredients. Mix well. Add the flour and mix thoroughly.
  4. Press your ready dough against the sides and bottom of the tart molds.
  5. Bake the tarts for about 20 minutes until they turn golden in color.
  6. Once ready, turn the molds upside down to lift the tarts. They should come right out. Continue with the remaining dough until you have made enough. Put them aside to cool down.
  7. Melt chocolate over a double boiler.
  8. With the tarts cooled, brush them with coffee both on the top and inside.
  9. Dip them in the melted chocolate and fill the inside of the tart with chocolate spreading it evenly.
  10. Set them aside for the chocolate to settle.

Prepare the cream

  1. Beat the mascarpone,  cream cheese, vanilla, and powdered sugar until mixed well.
  2. In a separate bowl, beat the heavy whipping cream until it’s stiff.
  3. Add whipping cream to the mascarpone mix. Gently mix them and refrigerate them until needed.
  4. Use a decorating bag to pipe the cream into the tarts.  You can also use a spoon for this process.
  5. Keep refrigerated.
  6. Serve them chilled.

Ingredients

For the crust

  • 2 ¼ cup crushed ladyfingers
  • 6 tbsp butter melted
  • 2 Tbsp sugar

For the ganache filling

  • 400 grams Selections Dark Baking Chocolate, chopped
  • 1 cup heavy whipping cream
  • ½ cup Marsala or kahlua
  • 1 tsp vanilla extract

For the Coffee Mascarpone topping

  • 1 cup heavy whipping cream
  • ¼ cup granulated sugar
  • 1 tsp espresso powder
  • ¼ – ⅓ cup cocoa powder

Method 

For the crust

  1. Preheat the oven to 350 degrees F.
  2. Put the ladyfingers in a food processor and crush them until they look like coarse crumbs. Place them into a medium bowl and stir in the sugar, instant espresso powder, and melted butter.
  3. Stir thoroughly until fully incorporated and then transfer them to a baking pan with a removable bottom.
  4. Press the crumbs firmly and evenly into the base and on the sides of the pan.
  5. Bake for about 10 minutes and then remove from oven allowing them to cool while making ganache filling.

For the ganache

  1. Put the chopped chocolate, vanilla, cream, and Marsala into a large microwave-safe bowl, stir and microwave the mixture for 20 seconds at a time stirring each time until smooth.
  2. Pour the mixture over the prepared tart and chill it for 1-2 hours or until the filling firms up ​enough to slice.

For the mascarpone topping

  1. Place mascarpone in a large bowl and beat with a mixer for just a few seconds to soften. Then mix in the sugar, espresso powder and drizzle in the cream in a slow stream and vanilla while mixing.
  2. Continue mixing at medium speed just until firm peaks form and can hold their shape. Do not over mix so that it doesn’t get grainy.
  3. Pipe the mascarpone topping over ganache with a pastry bag or just spoon it over and smooth it over in one even layer.
  4. Finally, give it a light dusting of cocoa powder.
  5. Slice and enjoy.
