Ingredients
The ingredients you’ll need for this recipe are:
- one pound of candied cherries
- one pound of candied pineapple
- one pound of dates (pitted)
- one pound of pecans (chopped)
- 8oz of flaked coconut
- 3 tablespoons of all-purpose flour
- 2 cans of sweetened condensed milk
Recipe
Now all you need to do is:
Step 1: Preheat the oven
Preheat your oven to 300F. Lightly grease a pan and line with parchment paper.
Step 2: Chopping and mixing
Grab a mixing bowl and chop your fruit and nut ingredients. Once cut, add your coconut and combine with your hands.
Step 3: Adding flour and milk
Once combined well, add the flour and sweetened condensed milk. Mix until well blended.
Step 4: Baking
Pour mixture into your greased and lined pan. Bake in the center of your oven for around one and a half hours. Remove from oven and leave to cool.
Step 5: Cake removal
Run knife around the edge of the pan to make your cake easier to remove.

The second recipe we’ll be looking at today is a Condensed Milk and Fruit Cake recipe from Best Recipes. This is my go-to recipe when making condensed milk fruit cake.
Ingredients
The ingredients you’ll need for this recipe are:
- 1125g of mixed fruit
- 250g of butter
- 1 teaspoon of bicarbonate of soda
- 1 cup of water
- 395g of sweetened condensed milk
- 1 tablespoon of white vinegar
- 2 tablespoons of sherry
- 1 teaspoon of vanilla essence/extract
- 2 cups of sifted plain flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/2 teaspoon of ground cloves
- 1/4 cup of glace cherries (for decoration)
- 1/4 cup of almonds (for decoration)
Recipe
To make your cake, all you need to do is:
Step 1: Boiling
Grab a pan and add your mixed fruit, water, bicarbonate of soda and butter. Bring to a boil and allow to cool
Step 2: Adding further ingredients
Now add your sweetened condensed milk, sherry (or brandy), vanilla extract and vinegar
Step 3: Sifting flour and adding ingredients
Step 4: Baking
Step 5: Checking it’s fully baked
Check with a knife in the center of your cake to determine whether your cake is ready. It may need slightly less, or slightly more time
Step 6: Time to decorate
Decorate with your almonds and cherries as you wish
Step 7: Glaze, if you wish

TIP: Feel free to substitute some of the mixed fruit with raisins or nuts, if you’d prefer.
